Costa Rica Don Mayo La Loma
As simple as it sounds, sweet and clean are the two words we can't use enough to describe this coffee. There are two great reasons for this - carefully tended coffee trees grown at La Loma farm in Leon Corte de Tarrazu and meticulous processing at the Don Mayo micromill.
This coffee was grown at the acclaimed La Loma farm, which has received numerous accolades for the quality of their growing opertion, including a previous "Top 3" coffee at a past Costa Rica Cup of Excellence competition.
Hector Bonilla and his family, who manage the Don Mayo micro mill (one of the oldest in Costa Rica), have worked hard to perfect the process of milling over the years and you can taste the fruit of their labor in this incredibly clean cup.
We get notes of vanilla and brown sugar, with aromas of bittersweet chocolate, dried fruit and nuts.
We're roasting this coffee to a light-medium roast level, dropping the coffee around 412 degrees F, with a development ratio of 24%.
